4 c (approximately 1 large) zucchini chopped
2 c (approximately 5 medium) onions chopped
3 c ice water
2 tbsp. pickling salt
6 c tomatoes, peeled and chopped (approximately 6 medium tomatoes)
1 c chopped celery
2 c vinegar
1 1/2 c sugar
1/2 tsp turmeric
1 tbsp. mustard seed
1 tsp sweet basil

Prepare and measure all ingredients. In large mixing bowl combine zucchini and onions. Make a brine of water and salt. Let vegetables stand in brine for 1 hour and then drain. In a large saucepan mix together vinegar, sugar, turmeric, mustard seed and basil bringing to a boil. Pour over vegetables. Let stand one hour. Transfer mixture to large kettle and bring to a full rolling boil. Boil one hour or until thick. Pack into hot sterilized jars leaving 1/2 inch head space. Clean jar rims. Seal with canning lids and screw bands.
