8 - 10 medium potatoes
3 medium onions, chopped
3/4 C butter
1/2 tsp salt
1/2 pound bacon, cut into small pieces
1/8 tsp pepper
1 C sour cream
shredded cheddar cheese

Directions:
Directions:
Preheat oven to 400º
Peel and boil potatoes until tender. While cooking, saute onions in butter. Fry bacon pieces until crisp, drain. When potatoes are done, mash with potato masher. Add cooked onion, salt, pepper, about half the bacon and sour cream. Pour into a 2-quart casserole; sprinkle with remaining bacon and cheddar cheese. Bake for 20 minutes.
