1 C elbow macaroni (dry)
1/4 C chopped onion
1 Tbs butter
1 Tbs flour

1 1/4 C milk
8 ounces cubed Velveeta

Directions:
Directions:
Preheat oven to 350º
Cook macaroni according to package directions. Meanwhile, for the cheese sauce, in a small saucepan cook the onions in butter until tender but not brown. Sir in the flour and pepper and cook for 1 - 2 minutes. Stir in the milk and continue to cook and stir until slightly thickened and bubbly. Add cubed Velveeta and stir until melted. Stir macaroni into cheese sauce. Transfer to a 1-quart baking dish. Bake, uncovered, for 25 - 30 minutes. Let stand 10 minutes before serving.
