CAKE:
1 1/2 C vegetable oil
2 C sugar
4 eggs
2 C flour
1 tsp soda
1 tsp salt
2 tsp cinnamon
2 tsp baking powder
3 C carrots, grated
1 C pecans, chopped
1 C raisins (optional)

FROSTING:
1 8 oz package cream cheese, softened
1 stick butter or margarine, softened
1 pound powdered sugar
dash of salt

Directions:
Preheat oven to 350º

CAKE:
Beat oil, sugar and eggs until creamy. Sift (3 times), soda, salt, cinnamon, and baking powder. Combine ingredients; fold in carrots, raisins and nuts. Pour batter in to greased and floured 9 x 13-inch (or two 9-inch round pans) and bake for 35 minutes.

FROSTING:
Beat butter and cream cheese till smooth, add powdered sugar and continue to beat until spreading consistency. May need to add a few drops of milk.
