4 C apples (unpeeled, diced)
2 C flour
2 C sugar
2 tsp cinnamon
2 tsp baking powder
1 tsp salt
2 eggs
3/4 C vegetable oil
1/2 C raisins (optional)
1/2 C walnuts, chopped

Directions:
Preheat oven to 350º
Mix sugar, eggs and oil. Add dry ingredients. Stir in apples, raisins, and nuts. Mixture will be thick and somewhat dry. Bake in a greased 9 x 12-inch pan for 45 minutes.

NOTE: May want to make a powdered sugar glaze to drizzle on the top of cooled cake.
