Ingredients: 1 lb. fresh jumbo shrimp, deveined, peeled, and shells set aside. 8 c. seafood stock 2tbsp. olive oil 1 sm white onion diced 1 carrot, cut into 1/4 inch rounds 2 celery sticks diced 1 green bell pepper 1 tomato, seeded and diced 4 Chile De arbor, roughly chopped 2 tbsp. tomato paste 1 tbsp. dried shrimp powder Lime wedges for serving

Directions:in large pot, bring shrimp shells and seafood stock to a boil over medium heat. Reduce heat and simmer to blend flavors, uncovered for 20 minutes, stirring occasionally. Strain the broth into a large bowl, pressing on the solids w/back of spoon to release as much liquid as possible. Return the broth to the pot & keep warm. In medium, heavy saute pan heat olive oil on medium-high heat. Add onions and cook till translucent, about 5 minutes. Add carrot,celery, and bell pepper and cook till fragrant about 7 minutes. Add the tomato and Chile De arbor and cook for 5 minutes longer. Mix in the tomato paste and dried shrimp powder and cook for 3 minutes. Add the cooked veggies to the warm stock and cook on medium-low heat, covered 1/12 hours. Add the fresh shrimp to the simmering broth. Turn of heat and let the soup stand 3-5 minutes until shrimp are translucent and cooked through.
Serve hot with lime wedges. |
