Veggie Filling:

10 oz Lasagna noodles
1 tsp. salt to taste
1 tsp. Pepper
1 lb sliced mozzarella cheese
32 oz bag frozen mixed veggies Broccoli, cauliflower, carrots etc.
1 8oz jar mushrooms drained (optional)

White sauce

1 clove crushed garlic
3/4 c grated Parmesan/Romano cheese
3/4 c. butter
6 c. milk

3c ricotta cheese

Directions:
prepare lasagna noodle as direction on box
Cut Veggies into bit size approx. 1/2 inch cube
cook veggies till tender, drain veggies, mix veggies and Mushrooms (optional)
in sauce pan over medium heat, melt butter, add flour and mix till well combined. pour in milk and crushed garlic, salt & pepper to taste.
as it thickens, add more milk depending on desired consistence. Just before adding white sauce on 1st layer, stir in the Parmesan/Romano cheese to white sauce.
in 13 x9 x2 inch baking dish add layer of noodles, next 1/2 of the veggies layered on type of noodles spread evenly, spread 11/2 c ricotta cheese over veggies, place 1/2 lb sliced mozzarella cheese, pour just left then 1/2 white sauce on layer, repeat for second layer. top with a third layer of noodles and pour the rest of the white sauce over 3rd layer of noodles.

pre heat oven 375º
bake lasagna 45 minutes.
let stand 10 minutes before serving
