2 c fresh or frozen corn kernels
1 c white wine vinegar
3/4 c each chopped sweet green and red peppers
1/2 c each chopped celery and red onion
3/4 c granulated sugar
3 tbsp. water
1 tsp each celery seed, turmeric and dry mustard
1/2 tsp salt

In a large heavy non-corrosive saucepan combine corn, vinegar, peppers, celery, onion, sugar, water, celery seed, turmeric, mustard and salt. Bring to a boil. Reduce heat to medium-low and simmer uncovered 15 minutes until vegetables are tender-crisp and liquid has reduced a little. With slotted spoon, spoon vegetables into clean jars and pour liquid evenly over top. Cover. Store in refrigerator for up to about 1 month.
