4 large mushrooms
1 tbsp. butter
1 lb veal steak sliced thin
Salt and Pepper
4 thin slices swiss cheese
1 egg
2 tsp water
1/2 c fine cracker crumbs
1/4 c butter

Directions:
Directions:
Slice mushrooms and sauté in butter until tender. Cut veal into 4 pieces. Pound with edge of plate until very thin (1/4 inch thick). Sprinkle with salt and pepper. Lay a thin slice of swiss cheese on each piece of veal so that it covers half the piece. Top with mushroom slices. Fold meat over cheese and pinch edges together. Beat egg and water together with a fork. Dip veal in egg and then in cracker crumbs. Melt butter in heavy skillet. Saute veal in butter over moderate heat until golden brown on both sides.
