Ingredients:  
3 tbsp. butter
3 tbsp. all-purpose flour
1-1/2 tsp. salt
1/8 tsp. pepper
1 Small Diced Onion
2 c. milk
1 c (4 oz.) shredded cheddar cheese
5 cups thinly sliced peeled potatoes (about 6 Medium)
1tsp. cayenne pepper (optional)

Directions:
Directions:
Preheat over to 350 degrees. In a large saucepan melt butter over low heat. Stir in flour, salt & pepper till smooth.Gradually add milk. bring to a boil, cook and stir for 2 minutes, or until thickened.Remove from heat stir in cheese until melted, In bowl stir potatoes and diced onions.

Transfer into a greased baking dish. Layer potatoes and onions, pour sauce over potatoes & cover and bake 1 hour. uncover and bake 30-40 minutes until potatoes are tender.
