3 oz. whole wheat pasta (angel hair)
2 tbsp. olive oil (Divided use)
8 oz. medium shrimp, peeled, deveined
2-3 cloves garlic, crushed
1 tbsp. yellow bell peppers, finely chopped
1 tbsp. red bell peppers, finely chopped
2 tbsp. fresh lemon juice
1/4 c. low sodium, organic vegetable broth
pepper to taste
crushed red peppers to taste
parsley sprinkled -fresh or dry
basil sprinkled -fresh or dry

1. Boil pasta, drain and set aside
2. In large, nonstick skillet, heat 1 tbsp. oil over medium heat
3.Add shrimp and garlic, cook, stir frequently, 2-3 minutes or until shrimp is opaque and firm, Remove shrimp from pan and set aside.
4. Heat remaining 1 tbsp. oil over medium heat, add bell peppers, cook 3-4 minutes or until soft.
5. Add lemon juice, broth, pepper, red pepper, cook and stir for another 1-2 minutes.
6. Add shrimp, parsley, and basil; cook until heated through.
7. You can either add the pasta to the pan with the shrimp mixture and stir briefly or add the pasta divided to 2 plates and top with shrimp mixture
