1 load of French bread cut into 1 inch slices
2/3 medium tomatoes - chopped
1 T. olive oil
2 T. finely chopped onions
2 cloves of minced fresh garlic
1/4 cup of chopped cilantro
1/4 tea of salt
1/4 tea of pepper
1/4 cup of fine shredded mozzarella cheese (optional)

Directions:

Take bread pieces and brush with olive oil on one side. Place on a baking sheet. Bake at 325º until lightly brown. Mix remaining ingredients together. Spoon a teaspoon of tomato mixture onto toasted bread. Serve.

Depending on my taste, I may omit cheese from recipe and sometimes may add balsamic vinegar. I love cilantro and may add more to the recipe. Make and adjust the recipe to your taste. Enjoy.
