Shrimp in Sherry Sauce Recipe

2 T butter, melted
1/3 cup flour
1 1/2 cups chicken broth OR 1 cup broth and 1/2 cup good dry Fino Sherry
4 cloves garlic, minced
1 cup heavy whipping cream
1/2 cup minced parsley
2 tsp smoky paprika
salt & pepper to taste
2 lbs large uncooked shrimp, peeled and deveined(leave on tails if you are using as a cocktail or appetizer)
Hot cooked rice, fresh pasta, noodles for serving as a main dish
Lemon for garnish and taste

Pre heat oven to 400º F. Clean the shrimp and butterfly them for a nice presentation-set aside.
Make a light roux with butter and flour....cooked for 2-3 minutes and add the chopped garlic, smokey paprika and first addition of pinch of salt and pepper.
Add wine to deglaze pan and pick up any brown bits-or broth if only using broth. Add in all broth and cook an additional 5 minutes to thicken a bit. Add in cream and remove from heat.
Lay shrimp flat in a long buttered baking dish in single layer, pour sauce over and bake for 15-18 minutes or until bubbly.
Top with chopped parsley and garnish with cut lemon.
