2 T olive oil

6 slices bacon, finely chopped

1 medium to large onion, thinly sliced

5 pepperoncini peppers, drained, seeded and finely chopped

16 oz can diced tomatoes

Kosher (or regular) salt

½ lb thin spaghetti, cooked al dente

2T fresh Italian parsley, finely chopped

Freshly grated Parmesan cheese

Directions:

Heat oil in a skillet, add bacon and cook until crisp.

Add onions, stirring occasionally, until golden (about 10-15 minutes).

Add the peppers, tomatoes (with juice) and ½ tsp salt. Simmer for 10 mins.

While sauce simmers, cook pasta to al dente, per package directions.

Toss pasta with sauce and parsley.

Top with Parmesan cheese.
