3 cups slice fresh mushrooms (8oz)
1 cup chopped onions (1 large)
2 cloves garlic, minced
21/2 to 3 pounds of chicken ( breast, thighs, and/or drumsticks) skinned
3/4 cups reduced sodium chicken broth
1 6 oz can tomato paste
1/4 cup Merlot or other dry red wine or chicken broth
1 1/2 tsp dried basil, crushed
1/2 tsp salt
1/4 tsp black pepper
2 tbs corn starch
2 tsp cold water

Roasted vegetables or pasta (optional)

1. In a 3/12 to 5 quart slow cooker, combine mushrooms, onion and garlic. top with chicken. In medium bowl combine broth, tomato paste, wine, basil, salt and pepper. Pour mixture over chicken.
2. Cover and cook on low for 5 to 6 hours or high for 2 1/2 to 3 hours.
3. Transfer chicken and vegetables to a serving platter, reserving cooking liquid in cooker. Cover chicken and vegetables with foil to keep warm.
4. If using lo-heating setting, turn to high-heat setting. For sauce, in a small bowl cornstarch and cold water. Stir into cooking liquid. Cover and cook about 15 minutes more or until thickened spoon sauce over chicken.
