1/2c. chopped green onions or scallions
1/2c. chopped celery
2-3 sprigs parsley, chopped
1 large garlic clove
2 tsp. prepared horseradish
2 tsp. paprika
4 tbsp Creole or German mustard
1/2c. white wine vinegar
3/4c. olive oil
Tabasco to taste
Salt and Pepper to taste
1/2 lb freshly boiled shrimp, peeled

Lightly blend onions, celery, parsley and garlic in a food processor or blender. Whisk together paprika, horseradish, mustard and vinegar in a bowl. Gradually whisk in the oil. Add the green puree. Season to taste. Pour sauce into a bowl. Add the shrimp. Chill at least 3 hours.
