4 Tbsp. butter, softened (can use peanut butter too)
1/2 cup brown sugar
1/4 cup raw cane sugar
1/2 cup honey or agave nectar
2 egg whites
1 cup all purpose flour
1/2 tsp. baking soda
1/4 tsp. kosher salt
2 cups rolled oats
1/2 cup mixed seeds and or nuts (pumpkin seeds, almonds)
1/2 cup dried fruit (cranberries, cherries, blueberries)
1/4 cup semi-sweet mini chocolate chips

Preheat the oven to 350º. Line baking sheet with parchment paper. In mixer, cream butter, brown sugar and cane sugar together until smooth. Add the honey and egg whites, scrape down the sides of the bowl and continue to mix for another minute.

In a small bowl, whisk together the flour, baking soda and salt. Add flour to mixture and oats to wet ingredients and mix together until just combined. Fold in the seeds, nuts, dried fruit and chocolate chips.

Scoop dough in 1 tablespoon portions onto cookie sheet, leaving about an inch of space between each one. Bake about 8 to 10 minutes.

Can be made in make in a 13" by 9" pan - line the pan with parchment paper. When done, slice into bars. Can be frozen.
