1 lb. pork tenderloin trimmed and cut in thin strips
2 tbsp soy sauce
1 tbsp mirin (rice wine)
1 tsp packed dark brown sugar
1 tsp corn starch
4 tsp canola oil
4 medium garlic clove,minced
2 tbsp fresh ginger, minced
1 lb bok choy stalks cut in 1/2 inch pieces,
leaves chopped and kept separate, can use baby bok choy
4 scallions, chopped
1/3 lb pea pods, slice in half lenghtwise
1/2 cup cashews
3 tsp sesame oil

Directions:
Directions:
In bowl combine soy sauce, mirin, brown sugar, cornstarch, 1/4 tsp white pepper and 1 tsp sesame oil until cornstarch and sugar dissolve. Add pork toss to coat let marinate at least 1 hour.
Heat 2 tsp canola oil in pan over high heat add ginger an garlic stir fry 30 seconds add pork in single layer cook undisturbed 1 minute turn heat down stir fry until meat almost cooked about 2 minutes. Transfer to serving bowl
Heat remaining canola oil add bok choy stalks cook about 2 minutes til crisp-tender add pork, bok choy leaves, scallions, pea pods and cashews stir fry until leaves are wilted remove from heat stir in sesame oil and serve
