16 ounces mixed dried fruit
8 ounces granulated sugar
4 ounces margarine or butter
1 teaspoon ground mixed spice
1 teaspoon bi carbonate of soda
1 tin (approx425 pineapple pieces (Liquidized briefly with juice)
2 eggs
8 ounces self raising flour
Directions:
Directions:
Place all ingredient except eggs and flour into saucepan and boil for 3 minutes.
Allow to cool for at least 10 minutes
Lightly beat eggs and add to saucepan with flour
Mix ingredients well and put into greased 8" cake tin
Put into centre of preheated oven at Gas Mark 3 for 1 to 1.5 hours.

This cake can be used as an excellent Christmas Cake, just add almonds and glacier cherries and some brandy to taste.
For that special occasion and a bit extra flavour use fresh pineapple
The cake will keep fresh for a couple of weeks
