1 gal. pail green beans
3 1/2 c. vinegar
6 1/2 c. water
1/4 c. salt
6 cloves garlic
6 tsp. dill seed
6 large onion slices
1 1/2 tsp. red pepper seeds

Directions:
Directions:
Mix together vinegar, water, and salt. Bring to boil and boil for about 3 minutes. Pack in each jar: 1 clove of garlic, 1 teaspoon dill seed, 1 large onion slice, 1/4 teaspoon red pepper seeds, and as many green beans as will fit in the jar.

Boil lids and rings for three minutes. Pour brine in jars. Put on lids and rings. Turn upside down for 1 day. Ready to use in about two weeks (better if you wait longer).

I have also pickled peppers this way. Be sure to use a lot of onion slices because everyone likes the onion slices.
