1 lg onion (chopped)
4 t cooking oil
3 T flour
2 c 1-in pieces asparagus spears or broccoli flowerets
2 c half and half or milk
1 (141/2 oz) can chicken broth
8 oz red potatoes (cubed) about 1/2 cups
1/8 t red pepper (ground)
1 c shredded sharp cheddar cheese (4oz)
1 small tomato, (seeded and chopped)
1/3 c sour cream
1/4 t salt

Directions:
Directions:
1. In a large saucepan cook onion in hot oil until tender. Sprinkle flour over onion and stir to coat. Add the asparagus, milk, chicken broth, potatoes, salt, and red pepper.

2. Cook and stir until thickened and bubble; reduce eat. Simmer, covered, for 10 to 12 minutes or until vegetables ar just ender, stirring occasionally. Add cheese, tomato, and sour cream; stir until cheese melts.
