Ingredients:  
1 mango, peeled and diced
1/4 cup poblano pepper, seeded and diced
1/4 cup red bell pepper, seeded and diced
1/4 cup red onion, diced
1/2 cup diced cucumber
1-1/2 teaspoons finely chopped garlic
1/2 cups rice wine vinegar
2 Tablespoons of fresh cilantro (you can substitute fresh parsley), finely chopped
1/8 teaspoon salt
black pepper
Red pepper flakes

Directions:
Directions:
Combine first 6 ingredients and mix
Add vinegar, cilantro (or parsley), salt and pepper, red pepper flakes
Stir and add additional seasoning if necessary
