14 oz. flour (2 1/3 cups)
10 oz. honey
1 tsp. cinnamon
3 oz. citron-rind (cut into small pieces)
4 Tbsp. Kirsch (cherry liqueur)
1/2 lb. sugar (1 cup & 2 Tbsp.)
6 oz. almonds, ground
1/4 tsp. clove powder
lemon rind
1 tsp. baking powder
confectioners sugar

Let the honey come to a boil and add sugar. Let it come to a boil again. Mix flour and add all the other ingredients to the flour. Make a well in the flour and start to pour the honey in the well, working with 2 wooden spoons to mix everything together. Mix as long as it is hot and roll it into a greased and floured jelly roll pan. "Cut (mark indentations), on the top of the batter. Bake for 12 minutes at 350º.

Mix confectioners sugar and a little bit of water to glaze as soon as the cookies come out of the oven. Cut apart where cookies were marked.

This recipe must be done quickly from the time the honey is poured, cookies cut and the glaze applied once the cookies come out of the oven.
