15 Lasagna Noodles
2 cups cottage cheese (or more if needed)
1 Large Egg
1/2 tsp salt
1/12 cups shredded cheddar cheese
2 cups mashed potatoes (instant)
1/4 tsp pepper
1/2 tsp onion salt
1 cup butter or margarine
1 1/2 cups chopped onion
two packages (small) sauerkraut
Container of sour cream

Directions:

Cook noodles as directed. Drain and spread 5 noodles in bottom of a 13x9 inch
baking dish.
Combine cottage cheese, egg and onion salt. Spread over noodles
Cover with 5 more noodles. Drain and squeeze liquid out of sauerkraut and layer over noodles. Add another layer of noodles
Combine cheddar cheese, mashed potatoes, salt pepper and onion salt.
Spread over noodles
Saute onions in butter, slowly until clear and limp. Pour over noodles
Cover and bake 30 minutes at 350 degrees. Let stand 10 minutes before cutting. Serve with sour cream

This is a recipe from Prince Edward Island in Canada. I adapted it somewhat because I found it a little too dry. Instant potatoes are much better to use as it gives a creamier taste. But you can use regular potatoes. I added the sauerkraut for extra flavor…It is very hearty!
