1 cup cornmeal
1 cup flour
2 tsp. baking powder
1/2 tsp. baking soda
1 tsp. salt
1 large egg, lightly beaten
1 cup buttermilk
1/4 cup melted vegetable shortening

Directions:
Directions:
Preheat oven to 400º. Lightly grease an 8" or 9" pan. In a large bowl, stir the cornmeal, flour, baking powder, baking soda and salt. In a small bowl, beat the egg and buttermilk until well blended. Stir into the dry ingredients just until mixed. Blend in the melted shortening.

Pour the batter into the baking pan and bake for 20 to 25 minutes, or until lightly browned on top and a toothpick inserted into the center comes out clean. Turn out onto a wire rack and cool. Cut into squares and serve.
