2 T. veg shortening
2 medium onions finely chopped
2 T. sweet Hungarian paprika
5 lb. cut up chicken pieces
1/2 cup chicken broth
14 ounce can diced tomatoes
1 red or green pepper seeded finely chopped
Salt to suit
1/2 cup sour cream
1 T. flour

NOODLES
2 c. flour
4 eggs, lightly beaten
2 tsp salt
1/2 cup milk (or water)

Heat the vegetable shortening in large pan or Dutch oven over low heat. Wilt, do NOT brown, the onions for 10 or 15 minutes. Sprinkle with paprika and cook stirring for one minute.
Add chicken, broth, tomatoes and bell pepper, season with salt. Stir to coat chicken and bring to a boil. Reduce heat and simmer, do NOT boil, partially covered for 50 minutes stirring occasionally.
While the chicken is cooking mix flour and sour cream in a small bowl and set aside.
When the chicken has cooked for 50 minutes remove to a bowl. Cook the sauce over medium heat uncovered for 10 minutes to reduce slightly. Pour 1/2 cup sauce into sour cream mixture and whisk until smooth. Whisk this mixture back into the sauce pot. Adjust seasoning to taste. Return chicken to pot, covering well with sauce. Heat through over low heat. Serve over noodles.
NOODLES
Beat eggs slightly, add flour sifted with salt, and milk.
Use a tablespoon to drop off mix into boiling water. Helps to dip spoon into water so mix falls into pot. Adjust your noodle size to taste, about a 1/3 spoonful is recommended. Cook in boiling water for 20 minutes. Strain off water and serve.
