1/4 C salt
1/4 C brown sugar
1 stalk celery, chopped
1/2 onion, chopped
2 cloves garlic, smashed
2 bay leaves

Directions:
Let fish marinate for 8 hours. Take fish out of the brine and place on wire rack to dry for 2 hours. Place fish in smoker and smoke at 140 degrees until an internal temperate of 140 degrees.
