Ingredients: 1/2 c butter 1/2 c light brown sugar 1/4 c light Karo syrup 2 eggs, beaten 1 can evaporated milk 3 c cooked, mashed sweet potatoes 2 tsp. vanilla 1/4 tsp. salt 1 unbaked 9-inch pie crust Nutmeg (optional)

Directions:Preheat oven to 375 degrees. Cream butter, brown sugar and syrup together. Add eggs and stir. Add sweet potatoes and mix well. Stir in the milk, vanilla and salt, making sure all ingredients are thoroughly mixed. Pour into the pie shell and bake 40 minutes, or until a knife inserted in the center comes out clean. Dust top with freshly grated nutmeg if desired. |

Notes: When I was a very little girl (about ages 6-10, after Petra the Puerto Rican nanny went back to Puerto Rico), we had a housekeeper named Georgie Mincey. She was a wonderful black lady that I loved like a mother. She gave me unconditional love and discipline. Many nights during the month, Mother would have to work late at the bank because back then all statements and balancing of accounts was done by hand. On those nights, Georgie would take me home with her to spend the night with her and her grandson, Sammy. I loved those nights. We would bake cookies and make sweet potato pies. Although this is not her recipe, it makes me think of her and I wanted to share it with you. Back then only rich people made pumpkin pies, so the rest of us enjoyed a similar flavor from sweet potatoes.
