1 small head of iceberg lettuce
1 C frozen peas, thawed
1 red onion, chopped
1/2 C chopped celery
1/2 C chopped green pepper
1-1/4 C mayonnaise mixed with 2 teaspoons sugar
4 slices crisp bacon, crumbled
1-1/2 C grated cheddar cheese

Wash and tear up the lettuce into bite-sized pieces. Place lettuce in the bottom a large bowl for your first layer. Next, layer the frozen peas over the lettuce. Cover the peas completely with the chopped red onion. The next layer that you will add is the chopped celery. Spread a layer of chopped green peppers over the celery. In a separate bowl, mix the mayonnaise and sugar together. Carefully spread this layer over the celery. Make sure to cover the entire surface of the salad. Finally, garnish the salad with crumbled bacon, and top the bacon with grated cheddar cheese. Cover bowl tightly with plastic wrap or a lid, and refrigerate 8 hours, or overnight.
