4 c fresh guava juice
3 c sugar
1/4 c lemon juice (less for real sour juice, more for sweeter)

Directions:
Directions:
Place juice, sugar and lemon juice in a large pot. Boill vigorously for about 30-45 minutes or until the syrup starts to boil "thick" bubbles. Juice will sheet off your spoon or fill the tines of a fork. Remove from heat and pour into hot, sterilized jars.
If you choose to use pectin (Sure Jell), follow the directions on the package for boiling the juice.

Mimi always told us to watch for the boiling juice to get the "hominy flops" to know it was ready. Being the old fashioned grandmother, she would never use Sure Jell! I'm sure somewhere there are directions that give the exact temperature of the juice for proper jelling. We've always just winged it! Also, we made jelly one time and ever could get it to jell. Finally, Pops mother, Polly, told us it was because the weather was too humid; thus, don't make jelly on a humid day!!!!!!
