"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Ingredients:
Ingredients:
1 pound beef stew meat
Salt and finely ground black pepper
4 onions
2 plum tomatoes
1 red pepper (Hungarian paprika pepper or other thick-skinned red pepper preferred)
3 tablespoons peanut oil
1/4 cup hot Hungarian paprika
1 cup water, plus more as needed
Egg noodles

Directions:
Directions:
Cut the beef into 1/2-inch dice, removing any obvious ligaments and season with salt and pepper. Halve the onions vertically and slice from end to end into crescent-shaped slivers. Chop the tomatoes and red pepper, keeping each separate.

Heat 1 1/2 tablespoons of the oil in a Dutch oven over medium heat and fry the onions, stirring occasionally until soft and golden in color, 15 to 20 minutes. At the same time, heat the remaining 1 1/2 tablespoons oil in a skillet over medium-high heat and brown the meat in small batches. Transfer each batch of cooked beef onto a plate.

When the onions are soft and golden, add the paprika, stirring well to combine. Add the meat, the chopped tomatoes, and red pepper and stir together. Deglaze the skillet in which the meat was cooked with 1 cup of water, scraping up the brown bits on the bottom, and add to the onion mixture.

Simmer, covered, checking often to make sure the stew doesn’t stick to the pan, until the meat is fork tender and the vegetables begin to dissolve into a thick sauce, about 1 hour, adding water as necessary.

Serve over egg noodles.

This is really tasty and good. You may want to cut back on the pepper. It is "spicy."
