4-5 large eggs
green onions
green chili (diced)
mushrooms
salsa
sour cream
flour tortillas
milk
crazy mixed-up salt
cheese

Directions:
Directions:
Put eggs, diced chili, diced onions, sliced mushrooms and a dash of milk in a large glass or other suitable container and beat until thoroughly mixed. Pour contents of glass into omelette pan and cook until omelette is just turning lightly brown on both sides. Melt cheese on omelette just before serving. Served wrapped in tortilla, burrito style, topped with salsa, sour cream and diced tomatoes. Side dishes for us include has browns and sausage.

The perfect drink with this breakfast is Brut Champagne. Linda and I have had many a smooth Sunday with this breakfast.
