3 1/2 cups sifted all-purpose flour
1 tablespoon of baking soda
1 teaspoon of kosher salt
1 teaspoon ground ginger
1 1/2 teaspoons ground cinnamon
1/2 teaspoon white pepper
1/4 teaspoon ground cloves
1/2 teaspoon ground cardamom
10 tablespoons (1 1/4 sticks) unsalted butter, softened
1 cup granulated sugar
1/2 cup light brown sugar
2 large eggs
3/4 cup molasses

Preheat oven to 350
Combine the cinnamon,ginger,cardamom, and cloves in a small skillet over medium heat and toast, stirring with a wooden spoon, until fragrant, 2 to 3 minutes
Immediately scrape the spices into a bowl. Add the flour, baking soda, salt and white pepper, whisk to combine

Use an electric mixer and beat the butter for 2 minutes. Add both sugars until light and fluffy. Add the eggs, one at a time, beating well after each addition and scraping down the sides of the bowl. Beat in the molasses. Stir in the dry ingredients.

Drop rounded table of the dough onto the baking sheets, spacing the cookies 2 inches apart.
Bake until the outer edges of the cookies begin to set and centers are soft and puffy, about 10 to 12minutes. Cool cookies on sheets for 2 to 3 minutes before transferring them to cooling racks.
