"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Ingredients:
Ingredients:
Pork Roll (Taylor - ONLY) - one to two pieces - either slice from Roll, or use 4 Slice package
Egg (large or extra large)
Cheese (Land of Lakes white is preferable, Vermont cheddar is ok)
Toast (Maier's or other to choice, including bagels)
Butter

Directions:
Directions:
Cook Pork Roll in frying pan on medium or low medium. Already cooked, so don't cook too long. Just brown on each side.
Remove and pat with paper towel to remove FAT.

Add a tab of butter to pan.
Crack egg in pan (or in bowl, for Sean, to make sure no shells get in the sammich).

Put toast in the toaster.

After a short time, take a knife and break yolk to spread across egg.
Flip egg when solid, but not over cooked.

Place cheese (a lot if you are a McSherry) on egg.
Place a small pot lid on egg and cheese to melt cheese.

When toast comes up, butter one piece of toast.

Place 1 - 2 pieces of Pork roll on buttered bread.
Scoop up egg and melted cheese and place on Pork Roll.
Top off with un-buttered toast.

In fact, do whatever you want!
It's a sloppy wonderful sandwich. Add as much as you want! Enjoy!
