3 eggs
2 c chopped zucchini
3 tsp cinnamon
3 c flour
1 tsp baking soda
1/2 c walnuts
1/2 c grated carrots
3/4 c salad oil (or light vegetable oil)
1 tsp vanilla
2 tbsp orange zest
1 tsp salt
1/4 tsp black pepper
1/2 c raisins
1 3/4 c sugar

Directions:
Beat eggs. Add sugar and mix well. Stir in oil, vanilla, zucchini, orange zest. Mix. Sift dry ingredients and stir in. Add raisins, walnuts and carrots. Mix together.

Bake 60 minutes @ 325 degrees
