2 Cups Flour
2 pkg (3.4 oz each) Instant Pistachio Pudding Mix
1/2 Cup Sugar
1 tsp Baking Powder
1/2 tsp Salt
1 Egg
1/2 Cup Butter, melted
1/2 Cup Canola Oil
1/4 Cup Water
1 tsp Vanilla
1/2 Cup Pistachios, chopped (optional)

FROSTING:
3 oz Cream Cheese (softened)
1/4 Cup Butter (softened)
1 tsp Vanilla
1/8 tsp Salt
3 Cups Confectioners' Sugar

Directions:
Directions:
In a large bowl, whisk flour, pudding mix, sugar, baking powder and salt. In another bowl, whisk egg, melted butter, oil, water and vanilla until blended; stir in flour mixture. If desired, stir in pistachios. (dough will be stiff).

Press dough into a greased 9 x 13" baking pan. Bake @ 350º for 20 to 25 mins or until edges begin to brown. Cool completely in pan on a wire rack.

FROSTING: In a bowl, beat cream cheese, butter, vanilla and salt until blended. Gradually beat in confections' sugar. Spread oveer top of cooled bars. Cut into bars before serving. Store in refrigerator.
