White Potatoes
Mayo
1/2 mild Cheddar Cheese
1/2 sharp Cheddar Cheese
Crumbled bacon (usually a pound, I like bacon)

Dice potatoes into large chucks with or without skins (cut the potato's to fill 1/2 of the casserole dish)
Preheat Oven to 400º. Boil Potatoes until slightly tender. If you have time, let them cool a little bit so the mayo will stick better. I cook my own bacon but you can use bacon bits. I cook my bacon while the potatoes are cooking. Lightly butter or spray your casserole dish. Pour potatoes in casserole dish and coat with mayo. Use just enough mayo to lightly cover the potatoes, mix it in to be sure to cover all of the potato chucks. Add your cheese, I just eyeball it and decide how much cheese I want. Do the same with the bacon crumbles or bits. Top with some more cheese and bake until potatoes are easy to pierce with a fork and cheese is all melted.  Enjoy!
