MOMO'S PARMESAN CHICKEN TACOS & PICO DE GALLO Recipe

Ingredients: ~FOR TACOS~ Shredded Chicken - *I usually use rotisserie chicken from Costco or Sam's Club, or I make shredded chicken in the crock pot. Either works great!* 1/2 Cup of grated Parmesan Cheese, give or take a few shakes. (The kind in the shaker dispenser is perfect) 8-15 Corn Tortillas (Again this number really depends on how many mouths you have to feed and how many tacos you are ready to devour, ha!) 1 head of Lettuce- Shredded For topping, Sour Cream and "Mexican" style shredded cheese or "Queso Fresca" Avocado or Guacamole if you desire (Cooking oil to fry the tacos)
~PICO DE GALLO~ 2 large Onions- Diced 4 Roma Tomatoes- Diced 6 Large cloves of garlic (I heart garlic)- Minced 2-3 Jalapenos depending on how hot you like it!- Minced or cut finely Cilantro to your liking Salt, pepper and Garlic Salt to taste

Directions:~TACOS~ Heat oil in medium size pan, the deeper the better. I'm sure you have all fried a taco before so I will spare you the details, he he. Pull cooked tacos out of pan with tongs and give them a little shake to get rid of excess oil. Place on a large dish and immediately sprinkle both sides of the taco shell with parmesan cheese. Cheese will fall off during this process so I keep a spoon handy and try to use excess to sprinkle on the tacos as I go.
Garnish tacos with whatever your little heart desires. I like lettuce, sour cream, salsa or homemade pico, avacado or guac if we have it lying around (lol) and cheese pleeaasseee!
~PICO DE GALLO~ Dice up onion and tomatoes, minced garlic, jalepenos and finely chopped cilantro and put in large bowl. I like to add a little salt and pepper to taste and Lawry's seasoning salt or garlic salt, it makes all the flavors pop. |

Notes: One of my favorite restaurants ever was "Tacos and Beer" in Pierpont beach, Ventura. I am honestly so sad they closed, they were always packed and people practically sat on top of each other in that little hole in a wall gem! They would sprinkle cojita cheese (which can also be used to substitute parmesan) on the outside of their hard tacos and it just made a great tacos even better. So I made these one night and since then they have become a favorite with the fam and my friends! Pico de gallo or "salsa fresca" is just one of those things that is so easy, but I always felt like mine was missing something, I don't like lemon or lime but some do. I added Lawry's one day and found it preserves the flavors and makes them stand out a bit more. -XoXo Niquey Pooh
