3 c diced apples
2 c. sugar
3 eggs
1 tsp. vanilla
1 1/4 c oil
3 c. flour
1 tsp. salt
1 tsp. soda
Icing:
1 stick butter
1 c brown sugar
1/4 c evaporated milk

Directions:
Directions:
Mix together first 5 ingredients, but don't beat.

Add flour, salt, soda. Mix, pour into greased oblong pan

Bake at 325º one hour

Icing:
cook butter, brown sugar and evaporated milk. Bring to a boil, then cool and pour over cooled cake.

This is another great recipe from my sister, Sue Nix. We have enjoyed this apple cake for many years.( It doesn't last for many years, though.)
