2 Tbsp salt
2 lb potatoes (recommend Yukon Gold)
3 Tbsp canola oil
1/4 c chpped red onion
1 red bell pepper
1/2 green bell pepper
3 Tbsp garlic
2 Tbsp tomato paste
1/4 c white wine
3 oz tomato sauce
3 T unsalted butter
1/2 c heavy cream
3 tsp salt
2 tbsp chopped cilantro

Directions:
Directions:
Cook potatoes in salted water until fork tender.

Heat oil in medium saucepan and add onions and peppers. Saute 3 minutes. Add garlic and cook until it starts to brown. Add tomato paste and stir. Cook 3-5 minutes. Deglaze with wine and reduce by half. Add tomato sauce and simmer 5 minutes. Stir in butter and cream. Add to the cooked potatoes and mash.

Garnish with cilantro? (I don't care for cilantro, so I don't use it)
