2 c diced potatoes
1/2 small onion, chopped
1/4 c milk
1/4 c flour
1/4 tsp baking powder
2 eggs
1 tsp salt

Directions:
Directions:
Put ingredients into blender (in order). Pulse on and off until lightly mixed. Pour into hot oil/grease and fry on one side until edges are lacy. Turn and brown on other side. You can pulse the blender before each time pouring to keep it mixed.

Traditionally these are served with applesauce, but I've always eaten them with mayonnaise (??? go figure?). Mom taught me this recipe - it is tons easier than grating the potatoes by hand and having them turn kind of gray. Lots of people make their potato pancakes with mashed potatoes, but using raw potatoes is the Jewish/German way to make them. Anne
