3 Tbsp. butter
4 Tbsp. flour
2 to 3 cups milk or half & half
salt
pepper
3/4 lb. cheese (can be a mixture)
parmesan cheese (optional)

Directions:
Directions:
Melt butter over low heat. Add flour to make a paste. Slowly add milk and continue to stir until sauce thickens. Add salt and pepper to taste. Add in shredded cheese. When melted, sauce can be used with tortellini, pasta or over crepes.
