1/2 C vegetable shortening
1 stick of margarine
2 C sugar
5 egg yolks
2 1/4 C flour
1 t baking soda
1 C buttermilk
4 t vanilla
1 C coconut
2/3 c chopped nuts
5 egg whites, beaten

Frosting: 1 8oz. pkg. cream cheese
1/2 stick margarine
1 # box powdered sugar
1 t vanilla
chopped nuts

Directions:
Directions:
Cream shortening and margarine with sugar. Add egg yolks one at a time. Beat well. Add flour and baking soda alternately with buttermilk. Add vanilla, coconut and nuts. Fold in beaten egg whites. Bake in two or three round 8x8x2 inch layers at 350º for 35 -40 minutes.

Cream first four ingredients of frosting together. Frost cake put chopped nuts on top of cake.

We had Kentucky Cream Cake every year for our Wednesday Night before Thanksgiving Mass and gathering for family and friends.
