1 tsp baking powder
2 C maple syrup

Directions:
1. Use an electric mixer to beat butter and sugar until smooth. Beat in eggs, one at a time, then flour and baking powder until completely incorporated. Chill batter in refrigerator at least 2 hours and up to 24.
2. An hour before serving, preheat oven to 450 degrees. Make maple cream: Bring maple syrup and heavy cream to a boil in a small saucepan.
3. Divide chilled batter among 10 small ramekins, filling each only halfway. Pour maple cream over batter, stopping at least 1/4 inch from the top. Place ramekins on a baking sheet and bake until tops are bubbling and caramelized, 20 minutes.
4. Serve immediately, with vanilla ice cream, creme fraiche or a drizzle of cold cream.
