1/3 Cup all purpose flour
1 tsp. Paprika
2 1/2 to 3 lbs. broiler fryer Chicken, Cut up
1 tsp. salt
1/4 tsp. Pepper
Shortening- for frying

Directions:
Directions:
Combine flour, paprika, salt and pepper in a plastic or paper bag. Add 2 or 3 pieces of chicken at a time and shake to coat. Heat shortening (1/4 in deep in skillet) until a drop of water sizzles. Brown meaty pieces first, then add remaining pieces. (Don't crowd) Brown one side, turn with tongs. When lightly browned,(15-20 Min.) reduce heat, cover tightly (if cover isn't tight, add 1 tablespoon of water) Cook until tender, 30 or 40 min. Uncover for last 10 minutes. (For crusty coating, add 1/2 cup find dry bread crumbs to flour.) Makes 4 servings.
