2 Tbsp olive oil
4 boneless chicken breast halves
Salt & pepper
1/w stick butter
3 large leeks (white & light green parts), sliced think
4 cloves garlic, minced
2 28-oz cans Italian plum tomatoes, drained and chopped.
2 tbsp dry vermouth or white wine
1 lb linguine, cooked al dente
1 c grated/shredded Parmesan
Fresh basil for garnish (optional)

Cut chicken into bite sized strips and season with salt and pepper. Saute in oil over medium heat until cooked through. Remove from pan. In same pan, melt butter. Saute leeks and garlic until very tender, about 10 minutes. Stir in tomatoes, vermouth/wine, and chicken and cook until heated through (about 5 minutes). Season to taste. Combine chicken mixture with linguine and 1/2 cup Parmesan cheese and toss well.

Sprinkle with fresh basil if desired. Serve with additional Parmesan cheese.
