1/2 C butter
3 beaten egg yolks
1 Tbs water
1 Tbs lemon juice
Dash of pepper

Directions:
Directions:
Cut butter into thirds and bring to room temperature.

In the top of a double boiler combine egg yolks, water, lemon juice, pepper, and a dash of salt. Add one piece of the butter. Place over boiling water (upper pan should not touch water). Cook, stirring rapidly, till butter melts and the sauce begins to thicken.

Add the remaining butter, a piece at a time, stirring constantly. Cook and stir till sauce thickens (1 to 2 minutes). Immediately remove from heat and serve.
