2 Italian-type buns
2 tablespoons butter
1-1/2 lbs. fresh mushrooms, cleaned and sliced
1 shallot, chopped
1/4 cup Sherry
1/2 teaspoon basil
1 cup light white sauce, heated
1 cup of light cream
1 cup grated Gruyere cheese
Pinch of nutmeg
Paprika
Salt & Pepper

Directions:
Cut buns in half lengthwise
Hollow insides of buns by scooping out half of the bread
Toast bread shells in oven, then set aside
Melt butter in large frying plan over medium high heat
Add mushrooms and season with salt and pepper
Cook 6 minutes over high heat
Stir in sherry, seasonings, white sauce and cream. Cook 5 minutes over low heat
Preheat oven to 400º
Arrange toasted bun shells on cookie sheet
Spoon in mushroom mixture and top with Gruyere cheese
Brown 3 minutes in oven
Serve
