Black Mussels
Freshly squeezed lemon juice
Fresh diced garlic
Fresh chopped basil
Dry white wine
EVOO
Scallion onions (I use shallots)
Splash of Pernod or Anisette

Directions:
Directions:
In a large skillet (with high sides), melt butter
Add garlic and scallions or shallots and saute until soft
Add lemon juice, wine, EVOO and basil and bring all to a boil
Once boiling add cleaned mussels, cover and cook until mussels are open. I cook for about 5-7 minutes

Serve with crusty French or Italian bread and lemon wedges

I do not have any specific portions. The more mussels you cook, the more ingredients you will need.
This is also wonderful served on top of spaghetti.
I get rave reviews every time I make this dish.
