1 3 to 4-pound corned beef brisket
4 medium potatoes, peeled and quartered
4 medium carrots, peeled and cut into 1 1/2-inch pieces
1 onion, quartered
1 head cabbage, cored and quartered

Directions:
Directions:
Place meat in a Dutch oven, adding juices and spice packet. Add water to cover meat. Bring to a boil, reduce heat and simmer, covered, about 2 hours or till meat is almost tender. Add all vegetables, except cabbage to the Dutch oven with the meat. Cover; return to boiling. Reduce heat and simmer 15 minutes. Add cabbage quarters; cover and cook an additional 15 to 20 minutes.
